Instructor: Kaesha Neil

In this lecture class, you will attain the knowledge to tackle canning with confidence.

Canning is an excellent method for preserving the abundance of your garden (or local markets) for less abundant times of the year. It does, however, require paying close attention to food safety, including the cleanliness of work surfaces and equipment and the freshness and cleanliness of your produce. This class will teach you what you need to know to tackle canning with confidence! Included will be an overview of boiling water bath canning and pressure canning, which foods are appropriate for which method, sample recipes, and resources.

About the Instructor:
Kaesha Neil is an urban ecologist and teacher with a B.S. in Biology and Ph.D. in Plant Biology. She continually strives for greater self-sufficiency in her urban homestead and maintains a home orchard, vegetable garden and pasture. In addition to extending her harvest through food preservation methods, she explores textile methods and other DIY pursuits. In addition to teaching at the college level, Kaesha has been one of VPA's PDC instructors.
