Food Preservation - The Lost Art of Canning with City of Peoria Special Interest

about the class:

Using the updated USDA research and tested methods for canning, attendees will learn to safely can their harvest.

The topics addressed are:

  1. Understand what Botullism toxin is and how it is addressed through proper canning methods.
  2. Learn how to can low acid foods in a pressure canner and high acid foods in a boiling water canner. Freezer canning will also be addressed.
  3. Learn canning methods for the following foods: fruits and fruit products, tomatoes and tomato products, vegetables, meats, fermented and pickled foods, and jams and jellies.
